Abstract

A new method for qualitative determination of 1-O-trans-p-coumaroylglycerol, using reversed-phase HPLC in combination with a coulometric electrode array detector, was developed. The occurrence of this ester in maize, sorghum and beer brewed with those compounds was confirmed. The results were verified by liquid chromatography-mass spectrometry. The HPLC method can be used to prove an addition of maize or sorghum to mash in the brewing process.

Zusammenfassung

Es wurde eine neue Methode zur qualitativen Bestimmung von 1-O-trans-p-Cumaroylglycerol mit Hilfe der RP-HPLC und eines coulometrischen Elektroden-Array-Detektors entwickelt. Das Vorhandensein des Esters in Mais, Sorghumhirse und Bier, das mit diesen Zusätzen gebraut wurde, konnte bestätigt werden. Eine Absicherung wurde mit Hilfe der LC-MS durchgeführt. Die HPLC-Methode eignet sich zum Nachweis von Mais- oder Sorghumhirsezusätzen bei der Bierherstellung.
