Abstract

Lipases appear to have wide distribution in the plant kingdom. The seeds of some species are particularly rich in the enzyme. Bamann and Ullman (1942, 1959), have investigated the seeds from a large variety of plants, and found that the majority with high lipase content belong to the families Euphorbiaceae, Ranunculaceae and Papaveraceae. There was little correlation between lipid content and the lipase activity. The seeds from grasses that produce the cereal grains also are fairly good sources of the enzyme. The two that have been studied the most are oat lipase (Martin and Peers, 1953) and wheat germ lipase (Singer and Hofstee, 1948). Bamann and Ullmann (1942, 1959) have also investigated the vegetative portion of a large number of plants and found no correlation between the lipase content of the seeds and the vegetative organs. The highest lipase activity of the vegetative portion was relatively low as compared to the generally high values in the seeds.
