Zusammenfassung
Zusammenfassend zeigen die hier mitgeteilten Untersuchungen folgendes:

1)
Phytinbilanzen für zahlreiche Pflanzenprodukte ergaben, daß Hafer keineswegs gegenüber anderen Cerealien und gegenüber Ölsaaten als abnorm phytinreich angesehen werden kann;
-
2)
die Phytase des Weizenkornes ist optimal im sauren Bereich (pH 5,1) und bei relativ hoher Temperatur (53–58°C) aktiv und wird bei der Keimung in beträchtlicher Menge neu gebildet.

3)
normale Getreidekörner enthalten keine oder nur geringe Mengen an Phytinspaltprodukten; die Phytinspaltung setzt erst in feuchtem Medium, z.B. bei der Mälzerei und Maischegewinnung ein und verläuft dann über alle Inositphosphorsäureester bis zu Inosit und Orthophosphorsäure, ohne daß die gesamte Phytinmenge abgebaut wird. Für den unvollständigen Abbau verantwortlich ist vor allem die räumliche Trennung von Ferment und Substrat;

4)
enzymatischer und säurehydrolytischer Enzymabbau verlaufen grundsätzlich verschieden, da beim Säureabbau eine Reihe von iso-Inositphosphorsäureestern gebildet werden, die bei enzymatischer Spaltung des Hexaesters nicht beobachtet wurden;
-
5)
es gelang zum ersten Mal, einzelne beim Phytinabbau auftretende Ester präparativ, in reiner Form und in beträchtlichen Mengen zu gewinnen.
Summary
The mentioned studies show the following:

1)
The balances of phytin resulted for numerous vegetable products that oats are not abnormally rich in phytin compared with other cereals and oil seeds.

2)
The optimum of the activity of the phytase in the wheat corn is in the acid field (pH 5.1) and at relatively high temperature (53–58°C). It is produced in considerable quantities during the germination.

3)
The grains contain no or but few quantities of the splitted phytin products; the splitting of phytin firstly begins in the moist medium, f.i. during the malting and the mash-production and runs on all esters of inositolphosphoric acid to the inositol and orthophosphoric acid, without the splitting up the whole quantity of phytin. The occurrence of enzyme and substrate in different areas of the corn is responsible at all for the uncomplete decomposition.

The enzymatic and hydrolytic decomposition of the enzyme are principally different, as during the decomposition of the acid several iso-esters of inositolphosphoric acids are produced which were not observed at the enzymic splitting of the hexaester.

5)
For the first time is succeeded, to isolate considerable quantities of some esters which were found during the decomposition of phytin.
Résumé
1) On a constaté en des bilans de phytine pour nombreux produits des plantes, que l'avoine n'est point plus riche que d'autres céréales ou des graines d'huile.
2) L'optimum de l'activité de la phytase dans la graine de froment se trouve dans l'environ acide (pH = 5,1) et chez une température relativement haute (53–58°C). Il est formé chez la germination en quantité considérable.
3) Des blés normals ne contiennent pas ou ne que des quantités petites en produits décomposés de la phytine. La décomposition de la phytine commence en milieu humide p.e. chez le maltage et chez la production de la trempe. Elle parcourt alors tous les esters de l'acide inosite-phosphorique jusqu'au inosite et l'acide ortho-phosphorique, sans que toute la quantité de phytine soit décomposée. La séparation de l'espace de l'enzyme et du substrat est responsable de la décomposition incomplète.
4) La décomposition par enzyme ou par hydrolyse acide est absolument différente, parce qu'une série des iso-esters de l'acide inosite-phosphorique est formée, qui n'était pas observée chez la décomposition enzymatique de l'hexaester.
5) On réussit par la première fois de gagner quelques esters, qui se forment chez la décomposition de la phytine en forme pure et en quantités considérables.
