Summary
The effects of 11 microorganisms (MO) isolated from herring on linoleic acid hydroperoxides have been determined. The activity of the MO could be divided into two groups: 9 MO which produce a slow and 2 MO which produce a fast breakdown of the hydroperoxides. The culture mediums of two MO (70 and 75) of the first group and one MO (29) of the second group have been analyzed. The datas show that the 13- and 9-hydroperoxioctadecadienoic acids were reduced to the corresponding hydroxi acids only by MO 75 and 29 but not by MO 70. The MO 75 is a strain ofPseudomonas fluorescens and the MO 29 is a yeast.
Zusammenlassung
Die Wirkung von 11 Mikroorganismen (MO), die aus Heringen isoliert worden waren, auf Linolsäurehydroperoxide wurde bestimmt. Die Aktivität der MO konnte in zwei Gruppen eingeteilt werden. 9 MO führten einen langsamen und 2 MO einen schnellen Abbau der Hydroperoxide herbei. Die Kulturmedien von zwei MO (70 und 75) aus der ersten und von einem MO (29) aus der zweiten Gruppe wurden analysiert. Es zeigte sich, daß nur die MO 75 und 29, nicht aber der MO 70 die 13- und 9-Hydroperoxioctadecadiensäuren zu den entsprechenden Hydroxisäuren reduzieren können. Der MO 75 ist einPseudomones fluorescens Stamm, der MO 29 eine Hefe.
