Zusammenfassung

Die wissenschaftliche Auseinandersetzung mit der Substanzgruppe der Ballaststoffe nahm ihren Anfang bei den Beobachtungen Burkitts (in den Jahren 1960–1970), der Unterschiede in bestimmten Krankheitsinzidenzen (Kolonkarzinom, Divertikulose u. a.) zwischen Afrika und England auf eine differente Ballaststoffaufnahme zurückführte [16]. Während zunächst angenommen wurde, dass Ballaststoffe den Magen-Darm-Trakt in unveränderter Form passieren, weiß man heute, dass diese überwiegend von der bakteriellen Kolonflora degradiert werden und dass von diesem Fermentationsprozess wichtige Wirkungen auf die Kolonmukosa ausgehen.
