Zusammenfassung

Die Zöliakie (Synonyme: „Einheimische Sprue“, „Glutensensitive Enteropathie“) ist eine häufige immun-mediierte Erkrankung des Intestinums. Große Studien in Europa und den USA zeigen eine Prävalenz von nahezu 1 % in der Gesamtbevölkerung (Green et al., 2003; Fasano et al., 2003; Tommasini et al., 2004). Die Häufigkeit der Zöliakie wurde in Nord- und Südamerika, Europa, Nord-Afrika, im Süden und Westen Asiens wie auch in Australien mit 1 : 130 bis 1 : 300 dokumentiert (Fasano et al., 2001; Green et al., 2003). Der Zöliakie liegt eine genetisch bedingte T-Zell-vermittelte Immunantwort gegen die Gliadinfraktion (Prolin- und Glycin-reiche Proteinfraktion) des Weizenproteins Gluten und verwandten alkohollöslichen Proteinen aus Roggen und Gerste zugrunde (Shan et al., 2002). Gluten und verwandte Moleküle verursachen eine grundsätzlich reversible entzündliche Reaktion mit lymphozytärer Infiltration der Dünndarmschleimhaut (Green et al., 2003).
