Abstract

The concept that nutritional status influences the susceptibility of a host to infectious disease is well established. However, elucidation of the roles of specific nutrients in the immune system represents a more recent endeavor. Archaeological data indicate that copper has been used by humans for multiple purposes for thousands of years. Egyptians and Chinese used copper salts therapeutically more than 2000 years ago (Owen, 1981). Davis and Mertz (1987) noted that copper compounds were frequently used in the 19th century to treat various diseases. Toxic properties of copper were also appreciated early on as cupric sulfate was used as a murder weapon and a suicidal agent. The biological reactivity of this metal ion is the basis for both its essentiality and toxicity.
