Energy characteristics of structures in aqueous solutions of sucrose

Abstract

Structures arising in sucrose solutions of various concentrations are modeled. A computer simulation by the molecular mechanics method proves the existence of three aqueous sucrose structures, which depends on the ratio between water and sucrose molecules. The calculated data are in good agreement with the experimental results obtained by different methods.
