Problems concerning the assay of dietary fibre

Probleme bei der Bestimmung der Nahrungsfaser

Abstract

As recent studies have shown, insoluble cell-wall constituents of plant material, defined as ‘nutritive fibre’, play an important role in the processes of nutrition physiology. The quantitation of this class of compounds is therefore of great importance. Some of the problems arising during analysis and possible ways of their solution are dealt with. The definition, the approximation to biological conditions, the labour and time involved, the costs, the repeatability, the preparation of samples, the method of enzyme attack, and the final preparation are discussed in detail.

Zusammenfassung

Wie neuere Untersuchungen zeigen, spielen unlösliche pflanzliche Gerüstubstanzen, auch als ‘Nahrungsfaser’ bezeichnet, eine wichtige Rolle in ernährungsphysiologischen Prozessen. Der quantitativen Bestimmung dieser Substanzklasse kommt daher grosse Bedeuting zu. Anhand des Analysenganges werden einige hierbei auftretende Probleme und Möglichkeiten zu ihrer Lösung besprochen. Im einzelnen wird auf die Definition, die Annäherung an die biologischen Verhältnisse, den Zeit- und Kostenbedarf, die Reproduzierbarkeit, die Probenvorbereitung, die Art der Enzymeinwirkung und die abschliessende Aufarbeitung eingegangen.
