Zusammenfassung
Das Ziel der Arbeit war vor allem den Lysingehalt einiger in Polen angebauter Weizen- und Roggensorten zu untersuchen, da bekanntlich diese Aminosäure einen großen Einfluß auf den Nährwert des Eiweißes hat.
Da an Hand eines Chromatogramms außer Lysin auch einige andere Aminosäuren bestimmt werden konnten, wurden diese Resultate mitberücksichtigt. Es wurden Untersuchungen an drei Winterweizen-und drei Sommerweizen-Sorten, außerdem noch an zwei Roggensorten ausgeführt. Zwei Winterweizen-Sorten welche in der Woiwodschaft Poznań (West Polen) angebaut waren, hatten 3,5–3,6 g Lysin/100 g Eiweiß, Sommerweizen 3,2–2,9 g Lysin/100g Eiweiß. Der Lysingehalt von Winterweizen in der Woiwodschaft Lublin (Ost Polen) war viel geringer und betrug 2,1 g Lysin/100 g Eiweiß und Sommerweizen 2,4–1,9 g Lysin/100 g Eiweiß.
Untersuchungen von zwei Roggensorten zeigten einen ziemlich hohen Lysingehalt (3,4 und 3,2 g Lysin/100 g Eiweiss.). Es kann also angenommen werden, daß das Roggeneiweiß zumindestens den gleichen, wenn nicht einen höheren Nährwert wie Weizeneiweiß hat.
In drei Tabellen wird außerdem der Gehalt von Cystein+Cystin, Histidin, Arginin, Alanin, Tyrosin und Valin, +Methionin angegeben.
Résumé
Le but des travaux était avant tout celui d'examiner la teneur en lysine de certaines sortes de froment et de seigle cultivées en Pologne, car il est connu que cet amino-acide exerce une grande influence sur la valeur nutritive de la protéine.
Etant donné qu'un chromatogramme permettait de déterminer en dehors de la lysine encore certains autres amino-acides, il a été également tenu compte de ces résultats. Des enquêtes ont été entreprises à trois sortes de froment d'hiver et trois sortes de froment d'été et en plus de cela encore à deux sortes de seigle. Deux sortes de froment d'hiver cultivées dans la région voyvode de Poznań (Pologne occidentale) disposaient de 3,5 à 3,6 g de lysine/100 g de protéine, le froment d'été 3,2 à 2,9 g de lysine/100 g de protéine. La teneur en lysine du froment d'hiver dans la région voyvode de Lublin (Pologne orientale) était bien inférieure et s'élevait à 2,1 g de lysine/100 g de protéine et le froment d'été à 2,4 à 1,9 g de lysine/100g de protéine.
Les enquêtes faites à deux sortes de seigle montraient une teneur en lysine assez élevée (3,4 et 3,2 g de lysine/100 g de protéine). Il peut donc être supposé que la protéine de seigle dispose au moins de la même sinon d'une valeur nutritive plus grande que la protéine de froment.
On indique en outre dans trois tableaux la teneur en cysteine+cystine, histidine, arginine, alanine, tyrosine et valine+methionine.
Summary
It has been the object of the work above all to examine the lysine content of some varieties of wheat and rye cultivated in Poland, as it is well known that this amino acid has a considerable influence on the nutritive value of protein. Since, by means of a paper chromatogram, some other amino acids in addition to lysine could evaluated, these results were also considered. Studies were made of three varieties of winter wheat and three of summer wheat as well as of two varieties of rye. Two varieties of winter wheat grown in the district of Poznań (Western Poland) contained 3,5–3,6g of lysine per 100 g of protein, summer wheat 3,2–2,9 g of lysine per 100 g of protein. The lysine content of winter wheat in the district of Lublin (Eastern Poland) was much lower and amounted to 2,1 g of lysine per 100 g of protein and in summer wheat to 2,4–1,9 of lysine per 100 g of protein.
Studies of two varieties of rye showed a rather high lysine content −3,4 and 3,2 g of lysine per 100 g of protein. It may thus be assumed that the rye protein has at least the same, if not a higher nutritive value than wheat protein.
In addition three tables indicate the content of cystein+cystine, histidine, arginine, alanine, tyrosine and valine+methionine.
