Summary
Under conditions which are optimal for the growth of moulds, addition of 0.13% sorbic acid increased the keeping quality of wheat bread for 100%, addition of a corresponding amount of sorboyl-palmitate for 180%, as compared to untreated control samples. Both preservatives considerably retard the aflatoxine formation, sorboyl-palmitate stronger, however, than sorbic acid.
