• 1. Der Schleimstoffgehalt bzw. die Quellfähigkeit ist ein primär sortenspezifisches Merkmal.

• 2. Ökologisch stark unterschiedliche Standorte haben ebenfalls einen deutlichen Einfluß, so daß erhebliche Qualitätsunterschiede in Abhängigkeit von der Provenienz auftreten können.

• 3. Aus der positiven Korrelation zwischen dem Sedimentationswert und der „alkohollößlichen Fraktion” des Eiweißes kann geschlossen werden, daß die Quellfähigkeit, neben dem Gehalt an löslichen Pentosanen, auch von der Proteinzusammensetzung beeinflußt wird.
