Bestimmung von Diterpen-Glykosiden im Bohnenkaffee

Summary

The determination of 3′O-β-d-glucopyra-nosyl-2′-O-isovaleroyl-2β-(2-desoxy-atractyligenin)-β-d-glucopyranoside (KA I) and 2-O-β-d-glucopyrano-syl-atractyligenin (KA II) in coffee was carried out by liquid/liquid-partition, column chromatography, thin layer chromatography, and photometry. Inrobusta andarabusta green coffees KA I levels were below the limit of detection, inarabica green coffees between 170 and 460 mg/kg. KA II was present inrobusta green coffees between 10 and 45 mg/kg, inarabusta green coffee at about 60 mg/kg, inarabica green coffees between 290 and 340 mg/kg. During roasting these values are reduced, but not during commercial extraction.

Die Bestimmung von 3′-O-β-d-Glucopyranosyl-2′-O-isovaleryl-2β-(2-desoxy-atracty-ligenin)-β-d-glucopyranosid (KA I) and 2-O-β-d-Glu-copyranosyl-atractyligenin (KA II) in Bohnenkaffee wird beschrieben. Sie erfolgt durch Flüssig/Flüssig-Verteilung, Säulen- und Dünnschichtchromatogra-phie sowie Photometric. KA I fand sich inRobusta- undArabusta-Rohkaffee in Konzentrationen unterhalb der Bestimmungsgrenze, inArabica-Rohkaffee zu rund 170–460 mg/kg, KA II inRobusta-Rohkaffee zu rund 10–45 mg/kg, inArabusta-Rohkaffee zu rund 60 mg/kg, inArabica-Rohkaffee zu rund 290–340 mg/kg. Beim Rösten vermindern sich die Gehalte, bei der technischen Extraktion nicht.
