Nitrate in vegetables

Summary

A determination of nitrates in vegetables is described. The basis for the assay is the nitration of p-cresol with subsequent separation of the 4-methyl-2-nitrophenol by steam destillation. In comparison experiments p-cresol was found to be superior to other nucleophilic substrates. 1,477 samples of different varieties of vegetables from normal, “organic” and greenhouse culture were examined for their nitrate content. Vegetables from greenhouse cultivation contain considerable amounts.

Zusammenfassung

Eine Nitratbestimmung in Vegetabilien wird beschrieben, der die Nitrierung von p-Kresol und Abtrennung des 4-Methyl-2-nitrophenols durch Wasserdampfdestillation zugrunde liegt. In vergleichenden Untersuchungen hat sich p-Kresol allen anderen nucleophlen Substraten überlegen erwiesen. Mit der Methode wurden 1477 Proben verschiedener Gemüsearten aus üblichem Feldbau, „biologischem” Anbau und Glashauskulturen auf ihren Nitratgehalt geprüft, wobei letztere beträchtliche Gehalte aufwiesen.
