Induction and some characteristics of sucrose hydrolyzing enzyme from zymomonas mobilis

Abstract

Zymomonas mobilis produces more sucrose hydrolyzing enzyme (SHE) when the culture media contain fructose. Strain B-14022 is able to grow and produce SHE in a medium containing sucrose. The nature of SHE is discussed.
