Summary
The cross point of the water adsorption isotherms of the lyophilised enzyme in air and of the lyophilised enzyme in the organic solvent gives a criterium to predict the equilibrium aw value to obtain the maximum yield in an esterification reaction in preparative conditions. The esterification of several (R,S) 2-arylpropionic acids is tested.
