Nisin production variability between natural Lactococcus lactis subsp. Lactis strains

Summary

Naturally occurring Lactococcus lactis subsp. lactis strains from a variety of national and private collections have been screened as to their nisin production capacity. Nisin production levels varied drastically between different strains. These large differences could be hardly explained. Assumptions have been made using factors such as the transcription and translation efficiency, the gene copy number, the nisin type, the nisin enzymology and the degree of nisin immunity.
