Zusammenfassung
Warum soll man zum Thema Gastronomie forschen? Diese Frage stellten sich Wissenschaftler über viele Jahre. Argumente, die für eine fundierte wissenschaftliche Auseinandersetzung mit dem Thema sprechen, sind:

a.
Essen und Trinken stellen ein menschliches Grundbedürfnis dar und sind damit auch elementarer Bestandteil wirtschaftlicher und sozialer Strukturen und kultureller Gepflogenheiten;
-
b.
die Sicherstellung einer ausreichenden Nahrungsmittelversorgung beschäftigt Staats- und Familienoberhäupter seit Anbeginn der Zivilisation; und
-
c.
die wissenschaftliche Auseinandersetzung mit Gastronomie gibt Aufschluss darüber, wer wir sind und was wir wertschätzen.
Kapitel 1 gibt einen Überblick über das Forschungsfeld Gastronomie. Was auf den ersten Blick sehr einfach scheint, entpuppt sich als spannende Reise zwischen historischer Entwicklung, multidisziplinären Forschungsansätzen und wirtschaftlicher Bedeutung.
