Abstract

In addition to canning, dehydration, and freezing there are scores of other methods of processing fruits commercially. Some of these involve the manufacture of primary products such as “Concord grape juice,” “Catawba wine,” “muscadine sauce,” cranberry juice, orange juice, apple cider and other juices, pickles, spiced fruit, juice concentrates, preserves and cocktail fruit.
