Abstract
In this chapter, several dietary factors not specifically considered in the other chapters are reviewed. In the main these are what others describe as micronutrients, in contradistinction to the macronutrients (fat, fibre, carbohydrates, protein). Also included are some beverages (coffee, tea). No attempt has been made to be all-inclusive, only those constituents of diet for which there is some epidemiological evidence are considered. Thus, contaminants of food present in trace amounts, e.g. pesticides, are not considered, as the scanty epidemiologic evidence available relates to exposure in the occupational setting, and not in relation to diet. Similar considerations apply to food colouring agents and food preservatives. Aflatoxin is, however, considered as evidence has been accumulating on its association with primary liver cancer in Africa and Asia.
