Abstract

Since there appears to be no precise definition for the term “macronutrient,” a somewhat liberal interpretation has been made in this chapter to include discussion of protein, fat, digestible carbohydrate, dietary fiber and alcohol (Table 13.1). The macronutrients are distinguished from the micronutrients (vitamins and minerals) by their greater abundance in the food supply and by the fact that, except for dietary fiber, they provide energy. Macronutrients are also used for the growth, maintenance, or regulation of body tissue.
