Abstract
Gezondheidsbevorderende stoffen in onze voeding staan al decennia in de belangstelling. Het effect van voeding en de daarin aanwezige bioactieve stoffen op onze gezondheid en het voorkÓmen van diverse ziekten wordt op verschillende niveaus bestudeerd, zowel de effecten van het gehele dieet als de effecten van de afzonderlijke componenten uit het voedingspakket.
Onderzoek toont aan dat een relatief hogere inname van plantaardige voedingsmiddelen als onderdeel van een gezonde levensstijl de kans op enkele veelal leeftijdgerelateerde ziekten kunnen verkleinen, zoals bepaalde vormen van kanker, neurologische aandoeningen, hart- en vaatziekten, en diabetes mellitus type II. Een belangrijke beschermende rol hierbij wordt toegeschreven aan diverse groepen bioactieve stoffen zoals antioxidanten, bepaalde vetzuren en detoxificerende enzymen. Met name plantaardig voedsel, zoals groente, fruit, peulvruchten, noten en granen, bevat veel bioactieve stoffen.
