Proteine sind natürliche Biopolymere mit einem sehr hohen „funktionellen Potenzial“. Unter funktionellem Potential wird die Gesamtheit an techno-funktionellen Eigenschaften verstanden, die ein Protein auf Grund seiner nativen Struktur besitzt [1].
