Résumé
Définition. Les phosphatases appartiennent au groupe des enzymes hydrolysantes ou hydrolases. On classe d’une façon générale dans les phosphatases les enzymes susceptibles de mettre en liberté par voie hydrolytique de l’acide orthophosphorique à partir de ses combinaisons minérales ou organiques. Une telle définition n’englobe pas toutes les phosphatases car l’on range aussi dans ce groupe les phosphodiesterases qui hydrolysent une molécule de diester orthophosphorique (I) en une molécule de monoester orthophosphorique (II) et un composé hydroxylé selon la réaction (I):
La notion de phosphatases enzymes hydrolysantes est demeurée pratiquement sans ambiguité jusque vers 1950. Depuis cette époque il a été montré que les phosphatases pouvaient transférer le radical orthophosphoryl sur d’autres accepteurs que l’ hydroxyle de l’eau.
