Fettsäuren sind Carbonsäuren von einer Länge zwischen C14 und C24, die im Allgemeinen unverzweigt und geradzahlig sind; alternativ können sie einfach oder mehrfach ungesättigt sein. Die wichtigste Quelle und Speicherform sind die Triacylglycerine (Neutralfette), in denen hauptsächlich C16- und C18-Fettsäuren mit Glycerin verestert sind.
