Zusammenfassung
Vor 100 Jahren enthielt die Kost allgemein einen hohen Anteil an Ballaststoffen, weil die Nahrung in gering verarbeiteter und wenig raffinierter Form verzehrt wurde. Bei der ärmeren Bevölkerung in den sogenannten Entwicklungsländern gilt dies noch heute. Inzwischen reduzierte sich bei uns der Verzehr von ballaststoffreichen Lebensmitteln wie Vollkorngetreide, Kartoffeln und Hülsenfrüchten erheblich, gleichzeitig stieg der Verbrauch ballaststoffarmer und ballaststofffreier Nahrungsmittel deutlich an. Damit erhöhte sich das Risiko für eine Reihe chronischer Wohlstandskrankheiten, gegen die eine höhere Ballaststoffaufnahme aufgrund ihrer unterschiedlichen physikalischen und physiologischen Wirkungen protektiv wirken kann.
