Abstract

Lipoxidase is an enzyme, thus far found only in plants, which catalyzes the oxidation of unsaturated fatty acids. It specifically requires cis,cis-1,4 diolefins such as linoleic, linolenic and arachidonic acids. In this direct addition of molecular oxygen the product is a cis, trans-1,3 diolefin hydroperoxide.
