Zusammenfassung
Bei älteren Menschen lassen bestimmte Funktionen und der Geschmacksinn nach. Das Durstgefühl wird vermindert gespürt. Durch fehlende Zähne oder mangelhaften Zahnersatz können alte Menschen oft nicht mehr richtig kauen. Salz wird weniger intensiv, aber Saures und Bitterstoffe intensiver wahrgenommen (Seib 2003). Oft bestehen gastrointestinale Beschwerden und die Nahrungsstoffe werden nicht mehr so effizient resorbiert. Eine ausgewogene Ernährung, die den Bedarf an allen Makro- und Mikronährstoffen deckt, ist die wesentliche Voraussetzung für ein gesundes Altern. Ernährungsbedingte Erkrankungen wie Unter-/Übergewicht, Hypertonie, Herz/Kreislauferkrankungen, Diabetes, Gicht, Verstopfung und Divertikulitis lassen sich durch eine altersgerechte Ernährung vermeiden; an Antioxidantien reiche Nahrungsmittel können den Alterungsprozess bremsen.
