Mushrooms: Isolation and Purification of Exopolysaccharides

Abstract

Mushrooms are kind of fungi that have been used as food and medicine, with rich sources of bioactive natural components. Polysaccharide is one of main bioactive constituents in mushroom, mostly composed of glucose by α/β glycosidic bonds. Because of its good benefit for health, mushroom polysaccharide can be used as functional food ingredients. When the polysaccharides are extracted from mushroom, different solvents, such as aqueous solution, alkaline solution and acidic solution are commonly used for pretreatment. The application of new science and technology, such as pressurized liquid extraction (PLE), ultrasonic-assisted extraction (UAE), microwave-assisted extraction (MAE) and supercritical fluid extraction (SFE), are employed to improve the polysaccharides extraction rate. Further purification with some techniques, involving freeze–thawing, treatment with Fehling solution, fractional precipitation, ethanol precipitation, closed dialysis and ultrafiltration as well as column fractionation are also discussed detailly in this chapter.
