Abstract
The vegetable crops constitute man’s richest source of vitamins, minerals, and plant proteins. They are, however, insufficiently utilized. As a consequence, hundreds of millions of people in the less developed countries show evidence of dietary deficiencies—particularly, they lack adequate protein and certain vitamins in their food. Some vegetable crops are, in addition, excellent sources of cash income for the small farmer.
