Abstract
THE process of subdividing the relatively large polydisperse oil globules of a coarse oil-in-water emulsion into a large number of smaller globules of narrow size range is termed “homogenization”. In a well homogenized emulsion the globules are so small that they have little tendency to rise and separate out; this is a desirable property of many emulsions of technical importance.
