Résumé
La production totale des agrumes en Tunisie a atteint 330 000 t en 2013. La « Maltaise », variété la plus représentante des oranges produites, a atteint 130 000 t en 2013, soit 15 % de la production totale. C’est la seule variété exportée dans notre pays en raison de sa haute qualité sensorielle et exceptionnelle. Le fruit et les feuilles sont les plus intéressants des sous-produits d’oranges. Ils contiennent des protéines, des minéraux et autres nutriments intéressants. L’épicarpe est une source d’huiles essentielles qui ont été utilisées depuis l’Antiquité pour leur saveur et par l’industrie du parfum. Les deux sous-produits (écorces et feuilles) contiennent une forte teneur en humidité qui atteint 65 %.
Abstract
Citrus fruits production in Tunisia reached 330 000 tons in 2013. The “Maltese,” the most representative variety of the produced oranges, reached 130 000 tons in 2013 or 15% of the total production. Only this variety is exported in our country due to its high and exceptional sensorial quality. The peel and leaves are the most interesting by-products of oranges. They contain proteins, minerals, and other interesting nutrients. Flavedo is the peel’s outer layer and it is a source of essential oils, which have been used since ancient times by the flavor and fragrance industry. The two by-products (peel and leaves) contain a high moisture content that reaches 65%.
