Definitions
Throughout this paper, a range of terms will be used; for clarity, the definition of some of keywords is explained below. Animal products, while used interchangeably with “meat and dairy” in this report, include all animals and their by-products: meat including fish, milk, dairy products, and eggs. Although in the literature a plant-based diet is sometimes used to refer to any diets that exclude meat, this report uses the commonly accepted definition in the nutrition industry, which defines a plant-based diet as a regimen seeking to minimize all animal products.
