Definition

Carbonyl metabolism is a general term used to collectively describe the reactions in which either the carbonyl group is formed or carbonyl carbon is reduced and/or further oxidized (Fig. 1). These reactions are catalyzed by three distinct families of enzymes:

  • Alcohol dehydrogenases (ADHs)

  • Aldehyde dehydrogenases (ALDHs)

  • Aldo-keto reductases (AKRs)
