Operational Definitions of Key Concept
Food insecurity: a household-level economic and social condition of limited or uncertain access to adequate food (USDA 2020).
Socioeconomic status (SES): the social standing or class of an individual or group… measured as a combination of education, income, and occupation (American Psychological Association 2020).
Food deserts: regions of the country (featuring) large proportions of households with low incomes, inadequate access to transportation, and a limited number of food retailers providing fresh produce and healthy groceries for affordable prices (Deener 2017).
Food swamps: a spatial metaphor to describe neighborhoods where fast food and junk food inundate healthy alternatives (Cooksey-Stowers et al. 2017).
