Definition
Foodways represent the complex interaction of factors that result in food access and experiences, from the global to the hyper-local. Sustainable foodways include considerations of food production and distribution in the context of sociocultural norms and economies, along with patterns of food preparation and consumption, which, by virtue of their resilience and flexibility, might exist indefinitely.
Introduction
Sustainability goals and metrics often focus on the future, an observation not surprising owing to the current state of the planet. But discounting the past – traditions, histories, and heritage – commits a disservice to the communities that have established long-standing, unique, and creative means of interacting with their environment.
