\▐kar-ә-▐gēn\ n [Carragheen, near Waterford, Irland] (1829) (sometimes spelled “Carrageenan” or “Carrageenin”). Hydrocolloid obtained from a group of sea plants related to Chondrus crispas, colloquially called Irish moss or moss. It is a complex carbohydrate made up of galactose, dextrose, and levecose residue. Useful for mucilaginous and gelatizing qualities. Also known as Irish Moss, Irish Gum, Pearl Moss, Pig Wrack, and Rock Salt Moss.
