Abstract
Victorin is a protein toxin produced by Helminthosporium victoriae (rust). The accumulation of victorin in the growth medium selectively damages oat cultivars containing the Pc-2 gene. The plant cell defense system is inactivated, and cells enter the defenseless mode owing to the release of victorin by H. victoriae. However, a low concentration of victorin activates the resistance genes in the same plant cultivars and thus acts as an elicitor. This present chapter provides a methodology for extracting and purifying victorin, a fungal metabolite, using different separation techniques.
