Chemical composition of the fruit pulp of Caryocar villosum

Abstract

Caryocar villosum is a fruit-bearing tree that grows in Amazonian tropical forests. Its butter-textured, yellowish fruit pulp is much liked by the inhabitants of the region. Analysis of the main ingredients, i.e. carbohydrates, minerals and trace elements and fatty acids as well as the composition of the sterol fraction, the free amino acids, the biogenic amines and volatile compounds are presented.
