Abstract and Summary
Seven sulfur compounds were found in industrially extracted rapeseed oils. Four of these were identified as 3-butenyl-, 4-pentenyl-, and phenethyl isothiocyanate, and 5-vinyl-2-oxazolidinethione. These compounds are hydrolysis products from glucosinolates present in the seed.
