Zusammensetzung der Fettsäuren und Tokopherole einiger „Pfälzer” Traubenkernöle

Summary

The composition of the fatty acid mixtures and the tocopherols of some sorts of German (District: Pfalz) grapeseed oils, which were received by own laboratory production, has been investigated. The distribution of the fatty acids was almost identical to the one of sunflowerseed oils. The total tocopherols were found between 30 and 120 mg/100 g. Generally the contents ofα-tocopherol were lower than those of the sunflouwerseed oils. From the aspect of food-physiology, the German grapeseed oils should be considered essentially.

Zusammenfassung

Die Zusammensetzung des Fettsäuregemisches und der Tokopherole selbstgewonnener deutscher (Pfälzer) Traubenkernöle wurden untersucht. Die Fettsäureverteilung war nahezu identisch mit der von Sonnenblumenölen. Der Gesamttokopherolgehalt schwankte dagegen zwischen 30 und 120 mg/100 g. Der Anteil anα-Tokopherol lag im allgemeinen niedriger als bei Sonnenblumenölen. Ernährungsphysiologisch gesehen ist das aus deutschen Traubensorten gewonnene Traubenkernöl als sehr wertvoll zu beurteilen.
