Summary

Catalase is a natural component of honey. The enzyme, which originates in pollen and nectar, has a destroying effect on the antibacterially acting honey inhibine.

Honey ofEricaceae- andRosaceae- (Prunus, Malus) flow show a striking, extremly high activity of catalase.

Zusammenfassung

Katalase ist ein natürlicher Bestandteil des Bienenhonigs. Das Enzym entstammt dem Pollen und Nektar der jeweiligen Trachtpflanzen und unterdrückt in starkem Maße die Wirkung der Honiginhibine (Bacteriostatika).

Honige aus der Tracht derEricaceae undRosaceae (Prunus, Malus) zeigen im Vergleich zu anderen mitteleuropäischen Honigen eine extrem hohe Katalaseaktivität.
