Summary
In the production of processed cheese the free amino acids possibly could be condensated to form peptides by the action of cyclic phosphates which might be present in the emulsifying salt. In model experiments we found that up to 4% of dipeptides are formed in aqueous leucin or methionin solutions of pH 11 in the presence of sodium trimetaphosphate and sodium tetrametaphosphate at a temperature of 70° C. No peptide formation was observed at pH 6–7. In experiments with emulsifying salt peptides were neither formed at pH 6–7 nor at pH 11, but after five days' reaction at pH 11 scarcely soluble amino acid-phosphate compounds were formed.
Peptide formation under the conditions of processed cheese production can thus be excluded.
The formation of peptides was followed by means of the amino acid analyser.
Zusammenfassung
Bei der Herstellung von Schmelzkäse könnten die freien Aminosäuren durch eventuell im Schmelzsalz vorhandene cyclische Phosphate zu Peptiden kondensiert werden. In Modellversuchen stellten wir fest, daß in wäßrigen Leuein- bzw. Methionin-Lösungen vom pH 11 in Gegenwart von Natriumtrimetaphosphat und Natriumtetrametaphosphat bei 70° C bis zu 4% Dipeptide gebildet werden. Bei pH 6–7 konnte keine Peptidbildung beobachtet werden. Bei Versuchen mit Schmelzsalz bildeten sich weder bei pH 6–7 noch bei pH 11 Peptide; nach fünftägiger Reaktion bei pH 11 entstanden jedoch schwerlösliche Aminosäure/Phosphat-Verbindungen.
Peptidbildung unter den Bedingungen der Schmelzkäse-Herstellung ist somit auszuschließen.
Die Peptidbildung wurde mit einem Aminosäure-Analysator verfolgt.
