Zusammenfassung
Essentielle Bedingungen für süßen Geschmack bei Verbindungen aus der Cyclamat-Reihe sind synclinale Konformationen von NH und SO in der Aminosulfonatgruppe, hydrophober Charakter und eine Länge von < 0,7 nm für die Gruppe am Stickstoff. Ein hypothetischer Rezeptorort für die Verbindungen muß folgende Kennzeichen haben: Eine räumliche Barriere in einem Abstand von etwa 0,7 nm vom Wechselwirkungspunkt des Stickstoffs mit dem Rezeptor und einen Bereich für hydrophobe Wechselwirkungen zwischen dem genannten Punkt und der Barriere.
Summary
The requirements of compounds in the cyclamate series for sweet taste stimulation are: synclinal conformation between NH and SO in the aminosulphonate group, length < 0.7 nm of the group on the nitrogen, and hydrophobic character of the latter group. A hypothetical receptor site for these compounds should have a spatial barrier at a distance of about 0.7 nm from the nitrogen interaction point with the receptor site, and a hydrophobic interaction area between the nitrogen interaction point and the barrier.
