Zusammenfassung
Die thermische Zersetzung der Betacyane verläuft bei pH 2,2–4,0 wie eine chemische Reaktion 1. Ordnung. Bei pH-Werten von 5,0 and höher entspricht aber die völlige Betacyan-Zersetzung der Reaktionskinetik einer nicht einheitlichen Ordnung. Die Zersetzungsgeschwindigkeit wird prägnant von der Temperatur beeinflußt. In einem pH-Bereich von 2,2 bis 8,0 and bei Temperaturen von 50 bis 90 °C finden sich Q10-Werte von 2–3. Die maximale thermische Stabilitdt der Betacyane liegt bei pH 4,0–6,0. Es gibt keinen wesentlichen Unterschied zwischen der thermisch beeinflußten Verfärbung eines aus der roten Rübe hergestellten Konzentrates and des daraus isolierten Betacyans.
Summary
The heat decomposition of betacyanins takes place at pH 2.2–4.0 according to the first-order kinetics; at pH value 5.0 and above the complete decomposition of betacyanins can be better described using a rational exponent-order kinetics. The destruction rate of betacyanins strongly depends on the temperature. In the pH range 2.2 to 8.0 and at temperatures from 50 to 90 °C the Q10 value ranges from 2 to 3. The region of the maximum heat stability is from pH 4.0 to 6.0. Heat stability of the best concentrate does not differ significantly from that of the betacyanin isolated from the same concentrate.
