Aromatic carbonic acids of honey

Summary

Honeys from different floral sources were analysed for aromatic carbonic acids which arise from the shikimi-acid-pathway. After separation into free and alkali-hydroxylable bound acids, gaschromatography-mass-spectrometry was used to identify the acids as their trimethylsilyl-derivates. 12 free and 9 bound acids could be detected in honey for the first time.

Zusammenfassung

Verschiedene Trachthonige wurden u. a. auf aromatische Carbonsauren des Shikimisäurecyclus untersucht. Die Identifizierung der Trimethylsilylderivate der Sauren erfolgte über GC/MS, wobei zwischen freien und alkalisch verseifbar gebundenen Sauren unterschieden wurde. Im Honig konnten 12 freie und 9 gebundene Sauren erstmals nachgewiesen werden.
