Abstract

Cucumber preservation through the solar drying concepts attracted most of the research interest in recent days due to various benefits associated with its moisture content. The current research is intended to compare open drying and double slope solar drying to find an effective method of cucumber preservation. Nine hundred grams of country species cucumber dried in both open and double slope solar dryer at the temperature range of 40 to 70 °C. This experimental study was carried out at the NIT campus, Karaikal from 10.00 AM to 04.00 PM, and drying operation was performed at a time interval of one hour. The moisture content of cucumber reduced from 93.4 to 12% within 7 h in doubles slope solar dryer and 11 h in open sun drying. Different parameters such as moisture ratio, Exergy, Energy, Pickup efficiency, Effective moisture diffusivity, Activation energy were determined. Obtained results are explained with suitable discussions and illustrated well with various figures.
