Abstract

Recent neutron scattering studies of the structure and single-particle dynamics of water molecules contained in micro-pores of Vycor glass and in hydrated amorphous protein powder are presented. In particular, results of neutron diffraction from D2O contained in both the Vycor glass and per-deuterated protein C-phycocyanin are analyzed to obtain the average structure factors and average pair-correlation functions as functions of the degree of hydration and temperature. Results of incoherent quasi-elastic and inelastic neutron scattering from H2O in these two same systems are analyzed to obtain the elastic incoherent structure factor (EISF), short-time self diffusion constant, resident time for jump diffusion, rotational relaxation time and proton density of states, as functions of coverage and temperature. Implications on the degree of confinement and slowing-down of the single particles motions are discussed in light of available NMR relaxation data and computer molecular dynamic simulation results.
