Abstract
It should be stressed at the outset that the term, microbial proteinase, refers only to proteinases with microbial origins. Hence, in this chapter the term will try to stay within this definition even though, today, proteinases from other organisms, e.g. human, have been expressed by microorganisms via genetic engineering.
