Abstract
The origins of the current interest in the role of dietary fiber in lipid metabolism came from a large body of epidemiological data that appeared in the early 1970s. These data compared the incidence of diseases common in the Western world with their incidence in native African populations.1–3 The extremely high consumption of dietary fiber in the African populations studied was suggested as a possible explanation for their decreased susceptibility to“Western”-type diseases. A great deal of discussion has ensued concerning the validity of these arguments as well as possible mechanisms for the involvement of dietary fiber in individual disease processes.4–7
